We allow the less identifiable leaderboards to update even with current countries. For example:

Total Defends
This leaderboard ranks users by the total number of defends they have taken across all rounds. This leaderboard is updated once a day.

Total Networth
This leaderboard ranks users by the sum of the networth of all alive countries from all previous rounds. This leaderboard is updated once a day.

We delay the total networth leaderboard because it might be too easy to figure out someone's current country based on how the stats change.

I think it'd be easier to identify someone based on their daily defend numbers than based on their daily networth fluctuations/jumps/

Honestly, they're both fairly easy to use to identify players. How difficult would it be for the leaderboard to update only a random percentage of the actual value.

Say someone gets 20M NW in express. The first day afterwards in which it updates, maybe their total NW goes up by some value between 0 and 20M, say it's 7M. The next update it's between 0 and 13M, etc etc until after enough updates it is more or less correct. It at least forces people to look for changes over longer amounts of time if they truly want to know who someone is. This could also work for defends, but possibly not for some other categories (such as top 3).

I would disagree. It's fairly easy to write down a player's total networth before the reset begins and simply subtract the difference to deduce their current country. The number of defends isn't as readily available, multiple countries can have the same number of defends, and the majority of countries are not attacked every day. The countries with the most defends are going to be at work, and how exactly are you going to account for restarts?

Another thing to keep in mind is that a country's land, networth, and rank don't mean much until the end of the reset. This is different from warring stats, which can have value even in the middle of a war. Why shouldn't we allow players to compare stats during a war?
